Bhamani's Banana Bread

My mom's banana bread was always a hit, I am so glad she scribbled a semblance of a recipe in her notebook for my sister and I. Just thinking about it fills my heart and kitchen with warmth. This recipe is delightfully easy and wonderfully comforting; perfect for sharing or enjoying quietly with a cup of tea. Let's bake together, shall we?


Ingredients:

  • 1 cup brown sugar

  • 1 stick (½ cup) butter, softened

  • 2 large eggs

  • 3 ripe bananas, mashed

  • 1 tablespoon milk

  • 1 teaspoon cinnamon

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt


Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan lovingly with butter or line it gently with parchment paper.

  2. In a large bowl, cream together the sugar and softened butter until it's fluffy and light

  3. Add in your eggs one at a time, mixing well after each addition. Stir in the mashed bananas and milk, bringing everything together into a smooth, comforting batter.

  4. In a separate bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Now, slowly fold these dry ingredients into your wet batter, mixing until just combined. Remember, over-mixing makes for tough banana bread, and we want it tender and soft.

  5. Pour your lovingly made batter into the prepared pan. Slide it gently into your preheated oven, and bake for about 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Allow the bread to cool for about 10 minutes in the pan. Then, transfer it onto a wire rack to cool completely, but between you and me, a warm slice with a bit of butter melting on top is pure heaven!
